Elli's (Betty Crocker) Brownies

Elli is my little foodie/baker in training. There is nothing like baking with kids to teach patience and the 5-second rule. Trust me. Both are important. Just kidding. About the 5-second rule. (Sort of.)

I told the dad of one of Elli's friends this past weekend that she's "a foodie in training." He said, "Oh, she's so skinny." Ok. I didn't mean she was a fatty in training. A foodie in training. You know, someone that appreciates food, flavors, etc. Of course I didn't say that. I didn't say anything. Which is good because what I was thinking wasn't nice. And yes, his daughter is one picky eater. Let me tell you....

Anyhow, we were at Safeway and Elli noticed they had brownie mixes on sale on one of the end caps - for just 77 cents. Sheesh. How can you pass that up? Elli picked out two boxes. So when we got home I asked her if she wanted to make the brownies. She was super excited. I set up all the ingredients for her. She did everything else all by herself! She even took this picture of the brownie. She's an excellent trainee.

I can't believe how grown up she's getting (sniff sniff.) She'll be 8 in about 3 weeks. Yikes.

She cracked the eggs all by herself. Perfectly!

Voila! Done.

Not bad, eh?  The brownies weren't bad either. Could have been a little more chocolatey. But what do you want for 77 cents.

PS. They tasted even better the next day. I should have bought a dozen boxes for backup.
