Portobello Ravioli with Brown Butter Sage Sauce


Need a super-quick, yummy dinner that everyone will gobble up, and takes you 10 minutes to make? Try Portobello Ravioli with Brown Butter Sage Sauce.

You hardly even need to write this one down. Which is just spectacular.

First, you need to go to Safeway. No Safeway? Then you're out of luck. Just kidding. Ha. Ha. If you do have a Safeway nearby, buy the Safeway Select Brand of Portobello Ravioli in the freezer section. You'll also need fresh sage, butter and garlic. That's it for the main dish. The rest is up to you. If you don't have Safeway, buy another kind of ravioli or tortellini that you like - cheese, portobello, roasted chicken, many kinds will work. I just happen to really like the portobello. And so does Don and Elli.

The ravioli take 2-3 minutes to boil. So while you are heating the pasta water you can make the sauce.

Brown Butter Sauce with Garlic and Sage
6 T. butter
6 cloves of garlic peeled and smashed (not chopped, smashed under a big knife)
1 T. fresh sage finely chopped
1 t. salt
1/8 t. pepper
Chopped parsley for garnish

1. Melt the butter in a medium frying pan over low heat. Add the garlic and cook 8 to 10 minutes. Let the garlic cook in the butter and smash it with the back of the wooden spoon. Add the salt, pepper and Sage and cook for another minute. Take off the heat.
2. Boil the ravioli for 2 to 3 minutes until al dente. Drain. Add back to pasta pan.
3. Pour the butter sauce over the ravioli. Gently stir. Plate the ravioli. Sprinkle parsley over pasta on each plate.
4. Serve with salad and garlic bread.
5. Eat.

We had a most excellent cabernet from Chateau St. Jean (from the cellar) with the ravioli. It was quite delish. And I have no idea what happened to the bottle. But it's gone!!
